Il Bushetto al Tartufo: an Italian semisoft cheese interlaced with white truffles. this surprisingly mild yet full flavored cheese has a light cheddar taste with just a hint of earthiness from the truffles. This cheese screams for a little chardonnay perfect with a slice of d'anjou pear,on a simple thin slice of your favorite bauguette! check your local specialty cheese store, whole foods or T joes....
Humbolt Fog Bleu Cheese: Can you say BEET Season! bake or boil them beets and ( I personally love the golden ones) slice or dice them, then make a light vinegrette,(try 1/4 c white wine vinegar, two tbs dijon, 1 tbs garlic, 1tbs minced onion,1tsp powder rosemary, 1 tsp thyme, 1c evoo, salt and pepp.) toss beets with some arugula and spinach in vinegrette and crumble on that scrumptious humbollt fog !!!! Yum! carnivors can crumble applewood smoked bacon as well!!Buon Appetite! Justin!
this weeks food and wine pick!
A simple Pizza Margarita with fresh basil and vine ripened tomatoes, goes perfect with a great bottle of Italian vino! I personally recommend a bottle of Gustino Pirovano ll Russo Di Enzo available at Whole foods market, or Market of Choice here in Oregon.
