dehydrate you favorite mushrooms (mine are porcini-boletes) and grind them in a food processor until they are dust. Then mix the dust with salt, pepper and Thyme or Rosemary.
Pat each side of your favorite fish in the mixture and sear in a pan with butter. Finish in the oven, and... oh! Hi Emeril! What would you say to this?
